Preparation and Cooking Time:
Prep Time: 15 minutes
Cooking Time: 30–35 minutes
Total Time: 45–50 minutes
Difficulty: Easy
Servings: 6
Ingredients:
For the Brownie Batter:
115g unsalted butter
150g dark chocolate, chopped
150g granulated sugar
50g light brown sugar
2 large eggs
1 tsp vanilla extract
65g all-purpose flour
25g unsweetened cocoa powder
1/4 tsp salt
For the Chocolate Pudding Layer:
200g light brown sugar
25g unsweetened cocoa powder
300ml hot water
1 tsp instant coffee granules, optional
For Serving:
Vanilla ice cream
Whipped cream, optional
Chocolate shavings, optional
Method:
Step 1: Prepare the Oven and Baking Dish
Preheat your oven to 175°C. Lightly grease a deep 20cm square baking dish or a similar-sized oven-safe dish with butter. Choose a dish with enough room for the brownie batter and the liquid pudding mixture, as the dessert will bubble during baking.
Step 2: Melt the Chocolate and Butter
Place the butter and chopped dark chocolate in a heatproof bowl. Melt them together using a microwave in short intervals, stirring between each interval, or place the bowl over a pan of gently simmering water. Stir until smooth, then allow the mixture to cool slightly.
Step 3: Mix the Eggs and Sugar
In a separate large bowl, whisk the granulated sugar, brown sugar, eggs, and vanilla extract until well combined and slightly thickened. Slowly pour in the melted chocolate and butter mixture, whisking gently until everything is incorporated.
Step 4: Add the Dry Ingredients
Sift the flour, cocoa powder, and salt into the chocolate mixture. Fold gently with a spatula until no dry patches remain. Avoid overmixing, as this can make the brownie layer tougher. Transfer the batter to the prepared baking dish and spread it evenly.
Step 5: Prepare the Chocolate Pudding Liquid
In a separate bowl, combine the brown sugar, cocoa powder, and instant coffee granules, if using. Gradually stir in the hot water until the sugar dissolves and the mixture is smooth. The coffee is optional but can deepen the chocolate flavour without making the dessert taste strongly of coffee.
Step 6: Add the Liquid Layer
Carefully pour the chocolate liquid over the brownie batter. Do not stir the mixture together. Although it may look unusual at this stage, the liquid settles beneath and around the batter as it bakes, creating the pudding-like sauce.
Step 7: Bake Until Gooey
Place the dish in the preheated oven and bake for 30–35 minutes. The top should look set and slightly crackly, while the centre remains soft and the sauce underneath bubbles gently. Avoid baking until the entire dessert becomes firm, as that will reduce the gooey pudding texture.
Step 8: Rest and Serve
Remove the dish from the oven and allow it to rest for 10–15 minutes. This gives the chocolate sauce time to settle while the dessert remains warm. Spoon portions into bowls, making sure to include both the brownie topping and the rich sauce underneath.
Serving Suggestion:
Serve warm with a scoop of vanilla ice cream, whipped cream, or fresh strawberries. For an extra chocolatey finish, sprinkle chocolate shavings over the top just before serving.
Tip:
Use good-quality dark chocolate for a deeper flavour. The dessert should still have a soft centre when removed from the oven, as it will continue to set slightly while resting. Baking time can vary by dish size and oven, so check the edges and centre rather than relying on the clock alone. This pudding is best enjoyed warm on the day it is made.
Enjoy this rich, gooey chocolate brownie pudding for a comforting homemade dessert with a crackly top, a fudgy centre, and plenty of warm chocolate sauce!
