  • Difficulty: Easy

Ingredients:

  • For the Pumpkin Mousse:

    • 200g cottage cheese

    • 120g pumpkin purée, unsweetened

    • 2–3 tbsp maple syrup or honey, to taste

    • 1/2 tsp vanilla extract

    • 1/2 tsp ground cinnamon

    • 1/4 tsp ground ginger

    • A pinch of ground nutmeg

    • A tiny pinch of salt

  • For the Topping:

    • 2 tbsp Greek yoghurt, optional

    • 1 tbsp chopped walnuts or pecans

    • A light sprinkle of cinnamon

    • A few pumpkin seeds, optional

Method:

Step 1: Prepare the Pumpkin Purée
If using homemade pumpkin purée, cook peeled pumpkin until completely tender, then blend until smooth. Allow it to cool before using. If the purée appears watery, drain off excess liquid so the mousse develops a thicker, creamier consistency.

Step 2: Blend the Cottage Cheese
Add the cottage cheese to a high-speed blender or food processor. Blend until smooth, scraping down the sides as needed. Continue blending until the curds disappear and the texture becomes creamy. This step is important for achieving a mousse-like consistency rather than a grainy dessert.

Step 3: Add the Pumpkin and Flavours
Add the cooled pumpkin purée, maple syrup or honey, vanilla extract, cinnamon, ground ginger, nutmeg, and a pinch of salt. Blend everything together until the mixture is uniform, silky, and lightly spiced.

Step 4: Adjust the Sweetness and Texture
Taste the mixture and add a little more sweetener if desired. If it is too thick to blend, add a teaspoon of milk at a time. Avoid adding too much liquid, as the mousse should remain thick enough to hold its shape when spooned into serving glasses.

Step 5: Portion and Chill
Divide the mousse between two small serving glasses or dessert bowls. Smooth the tops with a spoon, cover, and refrigerate for at least one hour. Chilling allows the flavours to develop and the mousse to become firmer.

Step 6: Garnish and Serve
Just before serving, add a spoonful of Greek yoghurt if desired. Sprinkle with chopped walnuts or pecans, pumpkin seeds, and a little cinnamon. Serve chilled for the best texture and flavour.

Serving Suggestion:
Serve this pumpkin mousse after dinner with a cup of coffee or warm tea. For a more indulgent presentation, layer it with crushed digestive biscuits or granola in a glass to create a pumpkin dessert parfait.

Tip:
Use plain, unsweetened pumpkin purée rather than pumpkin pie filling, which may already contain sugar and spices. For the smoothest result, blend the cottage cheese thoroughly before adding the other ingredients. This dessert is best enjoyed freshly chilled and should be stored covered in the refrigerator and consumed within 2–3 days.

Enjoy this creamy, warmly spiced pumpkin mousse for a simple homemade dessert that feels indulgent while using just a handful of everyday ingredients!
