If you love avocado but want to try something different from toast and guacamole, these crispy fried avocado wedges are a delightful alternative. Breaded with panko crumbs and fried to perfection, these wedges make a great snack, appetizer, or side dish. The spicy cilantro-lime mayo adds an extra kick, but you can also use your favorite ready-made dips like ranch, ketchup, or cream cheese dip.

Ingredients

For the Spicy Cilantro-Lime Mayo:

  • 1/2 cup mayonnaise
  • 1 tablespoon chopped cilantro
  • 1 tablespoon lime juice
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1 dash cayenne pepper (optional)
  • 1 dash salt (or to taste)

For the Fried Avocado Strips:

  • 2 large avocados
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1 dash ground black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tablespoon vegetable oil

Steps to Make It

Prepare the Spicy Cilantro-Lime Mayo:

  1. Gather the ingredients.
  2. In a small bowl, whisk together mayonnaise, cilantro, lime juice, smoked paprika, garlic powder, cayenne pepper (if using), and salt.
  3. Cover and refrigerate until serving.

Prepare the Fried Avocado:

  1. Gather the ingredients.
  2. Slice the avocados in half, remove the pits, peel, and slice each half into 4 or 5 strips.
  3. Set up a breading station with three bowls:
    • Bowl 1: Flour, salt, and black pepper.
    • Bowl 2: Beaten eggs.
    • Bowl 3: Panko breadcrumbs.
  4. Dip an avocado strip in the flour mixture to coat all sides, then dip in the beaten egg, letting excess drip off. Finally, coat with panko crumbs, pressing gently.
  5. Repeat with all avocado strips and place them on a plate.
  6. Add about 1 inch of vegetable oil to a deep sauté pan or Dutch oven and heat it to 350°F.
  7. Fry 4 to 6 avocado strips at a time for about 2 minutes, or until golden brown.
  8. Remove fried avocado strips to a paper towel-lined plate.
  9. Repeat with remaining avocado strips.
  10. Serve the fried avocado on a platter with the spicy cilantro-lime mayo.

Tips

  • Choose firm avocados: They should hold their shape when sliced, breaded, and fried.
  • Use neutral flavor vegetable oil: Canola oil, refined high-heat safflower oil, or grapeseed oil are best.
  • Careful when cutting avocados: Since the avocados are firm, the pit might be more difficult to remove. If so, cut the avocado half with the pit in half again and remove the pit by hand.
