Whipped brie is a luscious and creamy spread perfect for gatherings or as a treat for yourself. This recipe transforms brie into a fluffy, flavorful delight, complemented by a nut and date topping.

Ingredients

  • 3 (8-ounce) wheels of brie, cold
  • 1 medium shallot
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon plus 1/4 cup honey, divided
  • 3 tablespoons water, divided
  • A pinch plus 1/2 teaspoon flaky sea salt, divided
  • 1 medium lemon
  • 1/3 cup plus 2 tablespoons olive oil, divided
  • 1 tablespoon fresh thyme leaves, plus more for garnish
  • 1/2 cup quartered pitted dried dates
  • 1/2 cup chopped, toasted nuts (walnuts, pecans, pistachios, etc.)
  • 1/4 teaspoon freshly ground black pepper, plus more as needed
  • Toasted crusty bread or crackers

Steps to Make It

  1. Gather the ingredients.

  2. Prepare the brie: Slice the tops and bottoms off the brie while it is cold. Run your knife around the inside of the skin of each wheel, then remove the interior cheese and place it in the bowl of a stand mixer. Alternatively, use a large bowl and an electric hand mixer. Set aside for 20 to 30 minutes to allow the cheese to come to room temperature.

  3. Pickle the shallot: Halve the shallot vertically through the core. Thinly slice one half and set aside. Dice the remaining half and place in a medium bowl. In a small microwave-safe bowl, combine the vinegar, 1 teaspoon honey, 2 tablespoons water, and a pinch of salt. Whisk together, then microwave for 30 seconds until warm to the touch. Add the sliced shallots. Set aside to pickle.

  4. Prepare the topping: Zest the lemon into the bowl with the diced shallot, then juice the lemon into it. Add 2 tablespoons of the olive oil, the remaining 1/4 cup honey, thyme, dates, nuts, remaining 1/2 teaspoon salt, and pepper. Mix to combine and set aside.

  5. Whip the brie: Add the remaining 1/3 cup oil and 1 tablespoon water to the bowl with the brie. Beat on medium-high speed until light and fluffy, 5 to 8 minutes, scraping down the sides and bottom of the bowl occasionally. If using an electric hand mixer, it may take a few extra minutes. The brie will lighten up as it mixes, even if it's still slightly cold.

  6. Assemble: Spread the whipped brie across a platter or serving plate. Spoon about half of the nut and date topping over the top, transferring the remaining topping to a bowl to serve on the side. Sprinkle the pickled shallots over top, then garnish with additional fresh thyme and flaky salt. Serve with toasted crusty bread or crackers.

How to Store Whipped Brie

  • Refrigeration: Store leftover whipped brie in an airtight container in the refrigerator for up to 5 days. It will thicken, so let it sit at room temperature for 10 minutes, then re-mix with a rubber spatula before serving.
  • Freezing: Not recommended as it will take on a grainy texture.
  • Make-Ahead: You can make the whipped brie ahead of time and store it in an airtight container until ready to use. Remix with a rubber spatula before serving. The nut and date topping can also be made ahead of time, but add the nuts right before serving.
