Ingredients

Dough Ingredients:
  • 1 1/2 cups almond flour
  • 1/3 cup coconut flour
  • 1/4 cup granular erythritol, or monk fruit
  • 1 1/2 teaspoons baking powder
  • 1 1/4 teaspoons xanthan gum
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon pure vanilla extract
Filling Ingredients:
  • 3 tablespoons unsalted butter, at room temperature or melted
  • 1/4 cup brown Swerve
  • 2 tablespoons ground cinnamon

Steps to Make It

  1. Gather the Ingredients:

    • Prepare all ingredients before starting the recipe.
  2. Preheat the Oven:

    • Preheat the oven to 375 F. Grease an 8-x 8-inch baking dish and set aside.
  3. Mix the Dry Ingredients:

    • In a large mixing bowl, whisk together the almond flour, coconut flour, granular sweetener, baking powder, xanthan gum, and salt.
  4. Combine Wet and Dry Ingredients:

    • Make a well in the center of the dry mixture, then add the eggs, melted butter, almond milk, and vanilla extract. Whisk until the mixture is smooth and there are no lumps. The dough should be sticky and tacky.
  5. Rest the Dough:

    • Place the dough onto plastic wrap or parchment paper and let it rest for 10 minutes.
  6. Prepare the Filling:

    • In a small bowl, stir together the brown Swerve and ground cinnamon.
  7. Roll Out the Dough:

    • Place an additional piece of parchment paper or plastic wrap over the dough. Roll the dough into a 6-x 9-inch rectangle.
  8. Add the Filling:

    • Dot the butter over the dough and sprinkle the cinnamon-sugar mixture evenly, leaving a thin lip about 1/2-inch around the edges.
  9. Roll and Cut the Dough:

    • Using the bottom piece of plastic wrap or parchment paper, roll the dough up horizontally into a log shape. Cut the dough into nine pieces.
  10. Bake:

    • Place the cut pieces, cut sides up, in the prepared baking dish. Bake until just golden, about 25 minutes.

Optional Cream Cheese Glaze

For a keto-friendly cream cheese glaze:

  • Swap out the sugar for the confectioner's erythritol or monk fruit.
  • Use unsweetened nut milk or heavy cream instead of regular milk.
  • Let the rolls cool for about 10 minutes before glazing.
