Ingredients:

  • 1/2 cup (64 grams) roughly chopped Black Forest ham
  • 1/4 cup (56 grams) shredded Gruyere cheese
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • Kosher salt
  • White pepper
  • 4 large eggs
  • Sliced chives, for sprinkling
  • Toast or soldiers, for serving

Steps to Make It:

  1. Prepare the Pan and Ramekins:

    • Gather all the ingredients.
    • Place 4 (4-ounce) ramekins in a large high-sided pan. Fill the pan with water until it reaches about three-quarters up the sides of the ramekins (around the top trim).
  2. Prep the Ramekins:

    • Remove the ramekins from the water.
    • To each ramekin, add 2 tablespoons (28 grams) of ham and 1 tablespoon (14 grams) of Gruyere cheese.
    • Top each with 2 tablespoons of heavy cream and 1 tablespoon of milk.
    • Season with a pinch of kosher salt and white pepper. Stir the ingredients together.
  3. Heat the Water:

    • Heat the pan of water over high heat until it starts to boil.
    • Reduce the heat so that the bubbles barely subside, maintaining a gentle simmer.
  4. Cook the Eggs:

    • Crack an egg into each prepared ramekin.
    • Carefully place the ramekins into the pan with the hot water.
    • Cover the pan with a clear lid to trap the steam.
    • Cook for 10 to 11 minutes for set whites and a runny yolk. For a firmer yolk, cook for 13 to 14 minutes.
    • Ensure the ramekins remain stable; if they start to rattle, reduce the heat.
  5. Serve:

    • Remove the ramekins from the pan using tongs or a heat-resistant glove.
    • Garnish with sliced chives.
    • Serve immediately with toasted bread or soldiers.

  • Do Not Lift the Lid: Avoid removing the lid during cooking to maintain the necessary steam for proper cooking.
