Salads are versatile and can be enjoyed year-round. This apple and walnut salad can be dressed up with ingredients like feta cheese for a spring or summer dish, or transformed into a hearty autumn and winter meal with confit duck strips and roasted potatoes. The combination of duck, walnuts, and fresh salad is exceptional. A thick balsamic dressing complements the flavors, but a lighter option with lemon juice and walnut oil is also delicious.

Ingredients

  • 1 cup walnut halves
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons good-quality balsamic vinegar
  • 1 pinch kosher salt
  • 1 pinch freshly ground black pepper
  • 1 head crisp romaine lettuce
  • 1 rib celery
  • 2 scallions
  • 2 Granny Smith apples

Steps to Make It

  1. Prepare the walnuts:

    • Preheat the oven to 325°F (163°C).
    • Place the walnuts on a small baking sheet and roast on the center oven rack for 7 minutes until they are a golden brown color. Avoid over-roasting as it will make them bitter.
  2. Make the dressing:

    • In a small bowl or ramekin, combine the olive oil and a little balsamic vinegar at a time, whisking until you create a thick, glossy dressing.
    • Taste the dressing and add salt and pepper to taste.
  3. Prepare the salad:

    • Chop the lettuce into strips.
    • Finely slice the celery and scallions.
    • Set the greens and veggies aside.
  4. Prepare the apples:

    • When ready to serve, cut the apples into quarters, remove the core, slice thickly, and then cut the slices in half to get small apple chunks.
  5. Assemble the salad:

    • Divide the salad greens and veggies between bowls or assemble in a large serving dish.
    • Sprinkle the apples over the top.
    • Gently crush the walnuts and sprinkle over the salad.
    • Drizzle with the dressing using a teaspoon.
    • Serve immediately.

Tips

  • Dressing Consistency: Depending on the quality of your balsamic vinegar, you may need more or less. Thicker, older balsamic vinegars require less.
  • Prevent Apple Browning: If not serving immediately, prevent apples from browning by adding 2 teaspoons of lemon juice to water and pouring over the chopped apples. This also adds a subtle flavor that enhances the salad.
