Ingredients
- 1 kg / 2 lbs watermelon, cut into bite-sized pieces, seeds removed
- 1 small Spanish red onion, finely sliced
- 3 tbsp red wine vinegar
- Salt and pepper, to taste
- 5 tbsp extra virgin olive oil
- 1 1/2 tbsp fresh mint, roughly chopped
- 75 g / 3 oz Danish feta cheese, crumbled into medium-size pieces
- Whole mint sprigs, for garnish
Instructions
Prep the Watermelon and Onion:
- Cut the watermelon into bite-sized pieces, removing and discarding the seeds. Set aside in a large bowl.
- Peel and halve the red onion, then thinly slice.
Make the Dressing:
- In a small bowl, whisk together the red wine vinegar, salt, and pepper until the salt dissolves.
- Slowly whisk in the olive oil, a few drops at a time, until the dressing is well combined.
- Stir in the chopped mint, then taste and adjust seasonings if needed.
