Watermelon Salad with Feta and Mint


This refreshing and summery salad combines sweet watermelon with the savory tang of feta, the sharpness of red onion, and the brightness of fresh mint. It’s perfect for a summer barbecue or a light, cooling side dish.


Ingredients

  • 1 kg / 2 lbs watermelon, cut into bite-sized pieces, seeds removed
  • 1 small Spanish red onion, finely sliced
  • 3 tbsp red wine vinegar
  • Salt and pepper, to taste
  • 5 tbsp extra virgin olive oil
  • 1 1/2 tbsp fresh mint, roughly chopped
  • 75 g / 3 oz Danish feta cheese, crumbled into medium-size pieces
  • Whole mint sprigs, for garnish

Instructions

  1. Prep the Watermelon and Onion:

    • Cut the watermelon into bite-sized pieces, removing and discarding the seeds. Set aside in a large bowl.
    • Peel and halve the red onion, then thinly slice.
  2. Make the Dressing:

    • In a small bowl, whisk together the red wine vinegar, salt, and pepper until the salt dissolves.
    • Slowly whisk in the olive oil, a few drops at a time, until the dressing is well combined.
    • Stir in the chopped mint, then taste and adjust seasonings if needed.
  3. Assemble the Salad:

    • Add the watermelon, sliced onion, and crumbled feta to the large bowl.
    • Pour the dressing over the mixture and gently toss until everything is evenly coated.
  4. Garnish and Serve:

    • Transfer the salad to a serving platter or bowl.
    • Garnish with whole mint sprigs.
    • Serve immediately for the best flavor and freshness.
