Ingredients
- 3 to 4 tomatoes, sliced into 1/3" (0.5 cm) slices
- 1 tbsp baby capers (or regular capers, roughly chopped)
- Few tinned artichokes, roughly chopped
- 1/4 red Spanish onion, finely sliced
- 1 1/2 tsp salt flakes
- Freshly ground pepper, to taste
- 2 tbsp olive oil
- 1/2 lemon, juiced
- 2 tbsp fresh oregano leaves (or any herb of your choice, like basil)
Instructions
Arrange the Tomatoes:
- Lay the tomato slices on a large serving plate, slightly overlapping them to create a beautiful layer.
Add the Toppings:
- Scatter the capers, chopped artichokes, and finely sliced red onion evenly over the tomatoes.
Season and Dress:
- Sprinkle the salad with salt flakes and a generous amount of freshly ground pepper.
- Scatter the oregano leaves (or your preferred herb) over the top.
Drizzle with Olive Oil and Lemon:
- Drizzle the olive oil and freshly squeezed lemon juice over the entire salad.
Let It Rest:
- Allow the salad to sit for about 5 minutes, letting the salt draw out the juices from the tomatoes, which will mix with the olive oil and lemon for a delicious dressing. Be careful not to let it sit too long, or the tomatoes might release too much juice.
Serve and Enjoy:
- Serve the salad immediately for the best flavor. It pairs wonderfully with crusty bread, grilled meats, or as a refreshing side dish.
Notes
- Make It Your Own: This salad is versatile! Swap out the red onion for shallots, or use olives instead of capers. Add fresh basil or mint for a different herbaceous twist.
- Tomato Quality: Even store-bought tomatoes shine in this recipe, as the salt and lemon bring out their natural sweetness and juices.
