Sabich with Green Tahini

Introduction:
Sabich, a classic Middle Eastern sandwich, is a vibrant and flavorful dish that brings together soft pita bread, roasted aubergine, hard-boiled eggs, and a medley of fresh vegetables. The star of this recipe is the bright and herby green tahini sauce, which adds a creamy, zesty touch to every bite. Perfect for lunch, dinner, or even a satisfying snack, this vegetarian dish is as healthy as it is delicious. Pair it with a touch of chili sauce for an extra kick!

Ingredients:

  • For the Salad:

    • 1/4 cucumber, finely diced

    • 2 tomatoes, finely diced

    • 3 spring onions, finely chopped

    • 1/2 lemon, juiced

  • For the Aubergine:

    • 1 large aubergine (about 350g), thinly sliced into long strips

    • 3 tbsp olive oil

    • A pinch of salt

  • For the Green Tahini Sauce:

    • 80g tahini

    • 1 lemon, juiced

    • 2 large handfuls flat-leaf parsley

    • 2 large handfuls mint leaves

  • Other Ingredients:

    • 4 round pittas, warmed

    • 2 eggs, hard-boiled and sliced

    • Chili sauce, to serve


Method:

Step 1: Prepare the Salad
In a bowl, combine the diced cucumber, tomatoes, spring onions, and lemon juice. Add a pinch of salt, toss to mix, and set aside.

Step 2: Make the Green Tahini Sauce
In a small food processor, combine the tahini, lemon juice, parsley, mint, 6 tablespoons of water, and a pinch of salt. Blend until smooth and creamy. Add more water, one tablespoon at a time, if needed, to reach your desired consistency.

Step 3: Cook the Aubergine
Heat a griddle or non-stick frying pan over high heat. Pour the olive oil into a shallow dish, add a pinch of salt, and toss the aubergine slices in the mixture. Cook the aubergine slices for 2-3 minutes per side, or until charred and tender.

Step 4: Assemble the Sabich
Cut open the warmed pittas to create a pocket. Stuff each pita with slices of hard-boiled egg, a generous serving of salad, and the grilled aubergine. Drizzle liberally with the green tahini sauce and add chili sauce to taste.


Serving Suggestion:
Serve your sabich with extra green tahini on the side for dipping and a fresh side salad for a complete meal.

Tip:
For added crunch, sprinkle some pickled cucumbers or crispy fried onions into the sandwich.
