Ingredients

  • 2 ripe peaches, pitted and sliced (about 2 cups)
  • Half an English cucumber, thinly sliced (about 1 cup)
  • Half a shallot, thinly sliced (about 1/4 cup)
  • 2–3 teaspoons olive oil
  • 1 lime, juiced and zested (about 1 tablespoon juice, 1 teaspoon zest)
  • Salt and pepper to taste
  • About 2 tablespoons mint leaves, packed
  • 2–3 teaspoons honey (hot honey recommended for extra flavor)

Instructions

  1. Prep the Ingredients:

    • Slice the peaches and cucumber into thin pieces. A mandoline works well for achieving even slices.
    • Thinly slice the shallot.
  2. Prepare the Cucumber and Shallots:

    • In a bowl, toss the cucumber and shallot slices with the lime juice, lime zest, olive oil, and a pinch of salt and pepper.
    • Let this mixture sit for 5-15 minutes. The cucumbers will soften and absorb the flavors.
  3. Add the Peaches and Mint:

    • Gently mix the peach slices and mint leaves into the cucumber-shallot mixture.
    • Drizzle with hot honey for an extra burst of flavor.
  4. Serve:

    • Season to taste with additional salt, pepper, and honey as needed.
    • Garnish with extra mint leaves and serve immediately for the freshest flavor.

Notes:

  • Substitutions: Nectarines can easily replace peaches.
  • Lime Alternative: If you don’t have lime, white balsamic vinegar, apple cider vinegar, or champagne vinegar can be used for a similar acidic punch.
  • No Need to Peel: Peeling the peaches isn’t necessary—the peels add color, texture, and extra fiber.
