Garlic and Black Pepper Beef Skewers


Ingredients

For the Beef:

  • 1.5 lbs skirt steak, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon curry powder
  • Freshly cracked black pepper

For Serving:

  • Fish sauce
  • Lime juice
  • Chili crisp (optional)
  • Fresh cilantro
  • Cooked rice
  • Steamed broccoli, bagged salad, or cucumber shallot salad (recipe in notes)

Instructions

  1. Prep the Skewers (Optional):

    • Soak wooden skewers in water for at least 15 minutes to prevent burning during cooking.
  2. Prepare the Beef:

    • In a bowl, mix the sliced skirt steak with soy sauce, garlic paste, ginger paste, salt, sugar, curry powder, and black pepper. For best flavor, marinate for 30-45 minutes (or at least 5-10 minutes if in a rush).
  3. Skewer the Beef:

    • Thread the marinated beef strips onto soaked skewers, scrunching the meat along the length of each skewer. Place skewers on a parchment-lined baking sheet and top with additional black pepper.
  4. Broil the Skewers:

    • Preheat the oven broiler on high. Position the oven rack 4-6 inches below the broiler. Broil the beef skewers for about 6 minutes, until caramelized on top and cooked through.
  5. Finish and Serve:

    • Let the skewers rest for a few minutes. Brush the caramelized tops with pan juices, and drizzle with lime juice and fish sauce. Garnish with cilantro and chili crisp if desired.

Alternative Cooking Methods (Without Skewers):

  • Air Fryer: Preheat to 450°F and air fry beef for 5-6 minutes. Keep beef in a single layer for optimal browning.
  • Pan Searing: In a hot cast iron skillet, sear the beef for 3-4 minutes, undisturbed, until golden brown.
  • Broiling (No Skewers): Broil beef strips directly on a parchment-lined baking sheet for 6 minutes.
