Ingredients

  • 6 large eggs

  • 1/2 cup whole milk cottage cheese

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 cup fresh spinach, steamed and chopped (or 1/2 cup frozen, thawed and squeezed dry)

  • 1/2 cup roasted red peppers, chopped

  • 2 green onions, thinly sliced

  • Olive oil or cooking spray for greasing

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a nonstick muffin tin with olive oil or cooking spray.

  2. Blend the egg mixture: In a blender, combine the eggs, cottage cheese, salt, and black pepper. Blend until smooth and creamy. Set aside.

  3. Prepare the vegetables: Steam the spinach for about 1 minute until wilted. Transfer it to a strainer and squeeze out excess moisture. Chop it roughly.
