Quick, easy, creamy, and crunchy, yogurt toast is a delightful breakfast that combines the flavors of cheesecake, custard, and French toast into one delicious piece of bread. Perfect for a wholesome and slightly sweet breakfast, this recipe is straightforward and versatile, allowing for endless toppings and creative variations.

Ingredients

  • 1 large egg
  • 3 tablespoons Greek yogurt (any variety or fat percentage)
  • 2 to 3 teaspoons sweetener (maple syrup, honey, or agave)
  • 1 splash pure vanilla extract
  • 2 slices good quality sandwich bread (preferably brioche or challah)
  • 1/4 cup berries of choice
  • 2 tablespoons chocolate chips (optional)
  • Confectioners' sugar (optional, for dusting)

Steps to Make It

  1. Gather the ingredients.

  2. Prepare the custard mixture:

    • Whisk together the egg, Greek yogurt, sweetener, and vanilla extract in a small bowl.
    • Mix until the ingredients are completely smooth and glossy, ensuring there are no lumps.
  3. Prepare the bread:

    • Take one slice of bread and press down the center to form a well, leaving a border of crust.
    • Pour half of the yogurt mixture into the well, spreading it into an even layer.
    • Scatter half the berries or chocolate chips over the top. Repeat with the second slice of bread.
  4. Cook the toast:

    • Air Fryer Method:
      • Place one slice on each of two levels (or cook one slice at a time if your air fryer is single layer).
      • Air fry at 350 F for 7 minutes.
    • Oven Method:
      • Preheat the oven to 350 F.
      • Bake both slices for 12 to 15 minutes.
  5. Finish and serve:

    • Allow the toast to cool for a minute or two.
    • Dust with confectioners' sugar, if desired.
    • Slice and serve immediately.

Recipe Tips

  • Preheating the air fryer: It does not significantly affect the cooking time or process, so you can choose to preheat or not.
  • Custard texture: For a firmer custard, use a thinner layer of filling. A thicker layer might result in the bread browning before the custard is fully cooked.
