- 1/4 teaspoon salt
- 1 dash freshly ground black pepper
- 1 pinch nutmeg, optional
- 2/3 cup diced tomatoes
- 1/2 cup coarsely chopped packed baby spinach
- 1/3 cup thinly sliced green onions
Steps to Make It
Prepare the oven and pan:
- Gather all ingredients.
- Position a rack in the center of the oven and preheat to 350 F.
- Spray a 12-well muffin tin with cooking spray.
Mix the egg base:
- In a large bowl, whisk together the eggs, shredded cheese, half-and-half, salt, pepper, and nutmeg (if using) until well combined.
Add the mix-ins:
- Stir in the diced tomatoes, spinach, and green onions until evenly distributed.
Fill the muffin tin:
- Divide the egg mixture evenly among the muffin cups, about 1/4 cup per cup.
Bake the egg bites:
- Bake until the egg bites are set, puffed, and light golden, about 15 to 18 minutes. (They will deflate once removed from the oven.)
Cool and serve:
- Let the egg bites cool for a few minutes in the muffin tin before removing them.
How to Store and Freeze
Refrigerate:
- Refrigerate cooled egg bites in a covered container within 2 hours and eat within 4 days.
Freeze:
- To freeze any remaining egg bites, arrange them on a baking sheet and place the sheet in the freezer until solid, about 1 to 2 hours.
- Place the frozen egg bites in a zip-close freezer bag and freeze for up to 2 months.
- Thaw the egg bites in the refrigerator overnight.
Reheat:
- Reheat egg bites in the microwave for 20 to 30 seconds.
- Alternatively, place them in a baking dish and heat in a preheated 350 F oven or toaster oven for about 10 minutes.
