Ingredients

  • Cooking spray
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 1/3 cup half-and-half, or whole milk
  • 1/4 teaspoon salt
  • 1 dash freshly ground black pepper
  • 1 pinch nutmeg, optional
  • 2/3 cup diced tomatoes
  • 1/2 cup coarsely chopped packed baby spinach
  • 1/3 cup thinly sliced green onions

Steps to Make It

  1. Prepare the oven and pan:

    • Gather all ingredients.
    • Position a rack in the center of the oven and preheat to 350 F.
    • Spray a 12-well muffin tin with cooking spray.
  2. Mix the egg base:

    • In a large bowl, whisk together the eggs, shredded cheese, half-and-half, salt, pepper, and nutmeg (if using) until well combined.
  3. Add the mix-ins:

    • Stir in the diced tomatoes, spinach, and green onions until evenly distributed.
  4. Fill the muffin tin:

    • Divide the egg mixture evenly among the muffin cups, about 1/4 cup per cup.
  5. Bake the egg bites:

    • Bake until the egg bites are set, puffed, and light golden, about 15 to 18 minutes. (They will deflate once removed from the oven.)
  6. Cool and serve:

    • Let the egg bites cool for a few minutes in the muffin tin before removing them.

How to Store and Freeze

  • Refrigerate:

    • Refrigerate cooled egg bites in a covered container within 2 hours and eat within 4 days.
  • Freeze:

    • To freeze any remaining egg bites, arrange them on a baking sheet and place the sheet in the freezer until solid, about 1 to 2 hours.
    • Place the frozen egg bites in a zip-close freezer bag and freeze for up to 2 months.
    • Thaw the egg bites in the refrigerator overnight.
  • Reheat:

    • Reheat egg bites in the microwave for 20 to 30 seconds.
    • Alternatively, place them in a baking dish and heat in a preheated 350 F oven or toaster oven for about 10 minutes.
