This chicken omelet is a satisfying meal that combines the protein of shredded chicken with the nutty flavor of Gruyere cheese and the freshness of spinach. It's easy to prepare, especially with leftover rotisserie chicken, and it looks impressive when served. Here's how to make it:

Ingredients

  • 4 large eggs, beaten
  • Kosher salt, to taste
  • Pepper, to taste
  • 1 teaspoon olive oil
  • 1/3 cup shredded cooked chicken
  • 2 tablespoons shredded Gruyere cheese
  • 2 tablespoons chopped spinach
  • Spinach salad and crusty bread, for serving

Steps to Make It

  1. Prepare the Ingredients:

    • Gather all the ingredients.
    • Whisk the eggs until the yolks and whites are completely combined. Add salt and pepper to taste.
  2. Heat the Skillet:

    • Heat the teaspoon of oil in a non-stick or cast-iron skillet over high heat. Swirl the oil around so that it completely coats the bottom of the pan.
  3. Cook the Eggs:

    • Pour the beaten eggs into the skillet and turn the heat down to low. Swirl the eggs to coat the bottom of the pan evenly.
    • Using a rubber spatula, pull the egg from the outside edge into the center, exposing parts of the pan so the egg can cook completely. Then leave the omelet alone for another minute or two. Remember to cook it on low heat so that it does not brown too much.
  4. Add the Filling:

    • Warm the shredded chicken slightly in the microwave or on the stovetop before adding it to the omelet—it won't get hot enough to completely heat up all of the chicken.
    • Add the shredded chicken, shredded Gruyere, and chopped spinach to one half of the omelet. Cook for 30 seconds.
  5. Fold and Finish:

    • Fold the other half of the omelet over the top of the filling. Cook for another 30 seconds to a minute, or until the cheese has melted.
  6. Serve:

    • Serve with a small spinach salad and some crusty bread.

Variations

  • Cheese: You can use any cheese you have on hand instead of Gruyere.
  • Herbs: Add finely chopped herbs like chives or parsley for extra flavor.
  • Cream Cheese: Mix a little cream cheese with the rotisserie chicken for a richer taste.

Tips

  • Shredded Chicken: Use rotisserie chicken or make your own shredded chicken in the Instant Pot, slow cooker, or by grilling or boiling the chicken. Shred it with forks and refrigerate or freeze any leftovers for use in salads, soups, and casseroles.
  • Eggs: Do not add any ingredients to the eggs except bits of chopped-up butter. Adding milk can make the omelet watery and thin.
