Method:
Step 1:
Cut four 1cm-thick discs from the thickest part of the aubergine. Toss the slices with 1 tsp of sea salt and place in a colander for 20 minutes. Afterward, wipe them dry with kitchen paper to remove excess moisture.
Step 2:
In a small bowl, mix the mayonnaise and harissa until smooth. Set aside.
Step 3:
Prepare three bowls for coating the aubergine: one with seasoned flour, one with beaten egg, and one with breadcrumbs mixed with ground cumin, garlic salt, and mild chili powder.
