Ingredients:
270g strong flour
200g all-purpose flour
7g sachet fast-action dried yeast
1/2 tsp fine salt
300ml almond milk + 1 tbsp for glazing
2 tbsp brown sugar
2 tbsp olive oil (for glazing the bread and pan)

Method:
Prepare the Dough:
In a large mixing bowl, combine the flour, yeast, salt, and sugar.
Pour in the almond milk and mix with a wooden spoon until the dough begins to come together.
Knead the Dough:
Turn the dough onto a work surface and knead for 10 minutes by stretching and reforming it until smooth and shiny.
First Proofing:
Place the dough in a lightly oiled mixing bowl, cover with a tea towel, and leave in a warm place to rise for 1-2 hours or until doubled in size.
Shape the Buns:
Transfer the dough to a work surface and gently press out the air with your fingertips.
Divide the dough into 8 equal pieces and shape each piece into a ball.
Second Proofing:
Arrange the dough balls on an olive oil-greased baking tray, ensuring at least 3cm of space between each.
Cover with cling film and let rise for another hour.
Bake the Buns:
Preheat the oven to 210°C (410°F).
Mix 1 tbsp of olive oil with 1 tbsp of almond milk and brush over the buns.
Sprinkle sesame seeds generously on top.
Bake for 13-15 minutes or until golden brown.
